Coconut palm sugar is made from sap of the coconut palm that is extracted and then boiled and dehydrated. It is a paleo safe option that provides the same number of calories and carbohydrates as regular cane sugar. Coconut sugar is between 70 and 79 percent sucrose while just three to nine percent each of fructose and glucose. Most people want to keep their consumption of fructose low so this is an advantage. Coconut sugar is brown in color and has a similar taste to brown sugar. This product can be substituted for cane sugar in most recipes. (Note: Coconut Palm Sugar is a different than Palm Sugar, as they are derived from different plants.)
